You Can’t Count Past Six

You Can't Count Past Six
With one you can’t count past six,
nor can the gap between v and x be fixed.
You can read all of these lines,
but can’t say what solves me.

What am I?

    Is it the letter ‘v’?

“with one, you can’t count past six” – You use one letter ‘v’ when you say “five” but would require a 2nd ‘v’ to get past six, i.e. to say “seven”

I’m not sure about the v and x gap and the other stuff, but thought I’d take a stab.

    Syllables?

I was thinking sort of along the line of roman numerals, because x is ten and v is 5, or something like that too.
