Is it the letter ‘v’?
“with one, you can’t count past six” – You use one letter ‘v’ when you say “five” but would require a 2nd ‘v’ to get past six, i.e. to say “seven”
I’m not sure about the v and x gap and the other stuff, but thought I’d take a stab.
